Compared to other states of the Mexican Republic, Sonora's cuisine is not so varied, however, the delicacies that have been proudly preserved through the years, are truly exceptional and will delight even the most demanding palate.
Due to extreme fluctuations in climate and the need to preserve food for long periods of time, Sonora developed the process of dehydrating foods. These were incorporated into its cuisine and nowadays are an important part of its tradition, such as the tasty 'Machaca', a salted meat that is dried under the baking sun and used as seasoning, eaten as a tasty snack or even as a main dish. Do not forget to try this delicious ingredient!
In the coastal areas, there are a great variety of dishes prepared with seafood, among which shrimp is considered the main ingredient, however, you can not miss the opportunity of trying the traditional 'Pescado Zarandeado' , an interesting dish prepared with a zesty seasoning wrapped in a banana leaf and grilled to perfection; or 'Caguamanta', another favorite dish among the people of Sonora, prepared with a manta ray fillet and cooked with celery, green beans and carrots added to a tomato sauce and Pasilla chili, flavored with oregano, cumin and garlic and gently fried.
A drink that represents the state of Sonora is a type of mescal produced from the distillation of juice from the maguey plants' broiled heart and usually drank as aperitif or digestive. The best way to round off a delicious meal, is to savor some typical cookies of the region called 'Coyotas', a kind of round cookie made of wheat flour and stuffed with Mexican brown sugar syrup. They were originally created in Villa de Seris, a small town south from Hermosillo.
