The food in this city is varied and tasty, most regional dishes feature juicy steaks, tender veal, baby goat or lamb. When you visit Saltillo you must try the savory, tender barbecued baby goat, delicious migas saltillenses, or machaca con huevo, beef jerky and eggs.
Other regional dishes from Saltillo are the patagorria (baby goat viscera), chicharron de adilla, (pork rinds), and cabrito al pastor o al horno, (barbecued or roast baby goat) served with some freshly handmade flour tortillas. Don't forget to taste the famous pulque bread, another favorite with locals and tourists alike. 
Made of wheat, egg, cinnamon and an ancient brew, there is a large variety of these pastries, with semitas and wava or walnut empanadas being the most popular. Both Panaderia Mena and La Reina bakeries are highly recommended places for trying this delicious traditional food.
Traditional beverages include aromatic fruit liqueurs, made from apple, pear and quince, as well as fine wines produced in Parras de la Fuente, the most important wine producer in Latin America. The vineyards and wineries are located an hour away from Saltillo, where they make the best "Sangre de Cristo" in the country, a sherry that is served with red meats for its delicate aroma and fine quality.
If you have a sweet tooth, how about some desserts made with local fruits and nuts, such as figs, quince, pine nuts, and almonds. Taste the famous nut rolls, stuffed with caramel; milk candies, called Glorias; or suaderos (jelly rolls stuffed with pine nuts and almonds).
